No dress code to worry about for lunch on poolside paella day at the Bahia Principe, Mexico. This was a few years ago but here I fondly reminisce and pine for sunnier days as we brace for yet another winter storm.

For dining I would put this resort way up there. The all-inclusiveness permitted the opportunity to fine dine at all three sister resorts and we were gastronomically stimulated all week. The Bahia Principe takes great pride in their staff of chefs and I was quite happy to sample their wares. We globe trotted from Japan to Brazil to the Mediterranean without leaving the beach holiday comfort of the Mayan Riviera. My husband dutifully pushed plate after plate of beautifully presented food across the table towards me knowing that  I couldn’t resist photographing everything.

Our appetites led us poolside one day with the promise of lobster paella and a bathing suit dress code. An impressive looking chef arrived with a trolley laden with all of the makings and he got right to work. In what looked to be a four foot wide steel cauldron, he worked with his ingredients in the morning sun.  All hungry sunglasses-clad eyes were on him and at the first sign of readiness a long line formed. A cart with ice-filled pitchers of lemonade and sangria appeared to quench our thirsts. Platefuls of paella, cool drinks, shaded lounge chairs and Mexican music.  Fantástico!!
